Spicey Mustard Sausage

I am a big fan of sausages, but they have to be really good quality. Today I found these organic “paprika” sausages with a meat content of 81% and 0,5% carbs. That’s my kind of wieners!

2 sausages á 100 grams
100 gr créme fraiche
1 tsp dijon mustard
salt, white pepper
red and yellow bell peppers, finely chopped
red onion, finely chopped
(tomato, finely chopped)
(grated cheese)

Cut the sausages lengthwise and split them open, these were quite curved so they each formed a decorative X shape.
Mix creme fraiche and dijon mustard, season with salt and pepper and spread it onto the sausages.
Chop the vegetables and sprinkle them on top.
If you want, add some grated cheese.
Bake in 225C/440F oven for 15-20 minutes.
Serve with a salad, or maybe cauliflower mash.
