Cottage Cheese Sandwich Pancake

Sometimes you just feel like having a sandwich. This is an alternative to almond flour bread: small pancakes made of cottage cheese and panfried in no time.

4 small pancakes:

1 egg

100 g /3.5 ounces cottage cheese

3/4 tbsp psyllium husk

a pinch of salt

Mix with a hand blender, spoon out four pancakes in a medium hot pan with butter. Let fry gently until ready to turn over.

When cooled off a bit, spread butter and put on your favourite toppings: cheese, ham, salami, veggies…

Variations:

Hors d’oeuvres with smoked salmon

Add vanilla, cinnamon and cardemom to the batter

Toasts with cheese, ham and mustard, put in oven for a few minutes

Serve with whipped cream and berries
